Turkey Tomato Florentine Burgers recipe photo

Makes: 8 burgers     Serving Size: 4 ounces
Prep time: 10 minutes     Cook time: 30 minutes

Ingredients:  
1 6-ounce package Uncle Ben’s Long Grain & Wild Rice Sun-Dried Tomato Florentine
1½ cups water
1 5.5 ounce can of low-sodium tomato juice (about 2/3 cups)
1 pound ground turkey
¼ cup fresh parsley, chopped
½ teaspoon onion powder
½ teaspoon garlic powder
8 hamburger buns
2 cups baby spinach
2 tomatoes, sliced

Directions: 
1.
Combine rice, contents of seasoning packet, 1½ cups water and tomato juice into a medium saucepan. Stir well. Bring contents to a boil. Reduce heat and simmer covered 25 minutes or until water is absorbed.
2. While the rice is cooking, combine the turkey, parsley and spices in a large mixing bowl.
3. Once the rice is cooked, allow it to cool by spreading out the rice on a large baking sheet for about 5 minutes.

Scoop the rice into the turkey mixture mixing bowl and combine well with your hands. Form the mixture into 8 burgers. Spray the burgers with cooking spray and heat over a medium grill or broil for about 4 minutes on each side.

Serve on your favorite toasted bun with baby spinach leaves and a slice of tomato, or try just serving the burger over a bed of baby spinach leaves.
