  Easy Fruit Salad
Recipe from  the
Virginia Health Department
 

easy fruit salad

Makes 5 servings

Ingredients:  

1 head lettuce
1 can (no sugar added or lite) pineapple chunks; drain but save the juice
2 small nectarines, peeled
1 can (no sugar added or lite) peaches; drain but save the juice
1/4 cup carrots, shaved or grated
1/2 cup celery, diced
1 apple, diced
1/2 cup 100% orange juice (no sugar added)
 
Directions: 

Chop all fruits and vegetables. Toss them in a large bowl.

Mix 1/4 cup pineapple juice, 1/4 cup peach juice, and 1/2 cup orange juice in a separate bowl.

Pour juice mixture over the fruits and vegetables.

Cover and refrigerate for 1 hour before serving.

Cooking Good in Greene options:

Mix and Match with different fruits - especially those in season or on sale.  Use different lettuces as well. Vary the fruit juice or mix up a fresh vinaigrette instead of the fruit juices.  A 1/4 cup of raisins or other small dried fruit and/or toasted almonds can add flavor and crunch. 

If you are making it for kids, let them mix up their favorite fruits or make a salad bar with the ingredients and let each person add their own.
